  1. 1. Rinse the fish thoroughly under running water.
  2. 2. Pat the fish completely dry with a kitchen towel.
  3. 3. Cut the fish into four equal pieces.
  4. 4. Season the fish pieces with salt and pepper.
  5. 5. Wash the vegetables thoroughly.
  6. 6. Peel the vegetables if necessary.
  7. 7. Cut the vegetables into very fine strips (julienne).
  8. 8. Mix the vegetable strips together in a bowl.
  9. 9. Place the fish pieces into a steamer insert.
  10. 10. Distribute the vegetable strips evenly over the fish.
  11. 11. Pour the wine and the broth into a pot.
  12. 12. Bring the liquid in the pot to a boil.
  13. 13. Place the steamer insert with fish and vegetables into the pot.
  14. 14. Cover the pot tightly.
  15. 15. Steam the fish for 10 to 12 minutes until cooked through.
  16. 16. Carefully remove the steamer insert from the pot.
  17. 17. Portion the fish onto individual plates.
  18. 18. Garnish the dish with fresh coriander.
  19. 19. Serve the soy sauce separately on the side.
