🍽️ Steamed Mussels with Colorful Vegetables

Ingredients
- 1 kg mussels
- 1 onion
- 150 ml white wine
- 100 ml vegetable broth
- 1 bay leaf
- peppercorns
- salt
- 2 carrots
- 1 chicory
- 100 g mushrooms (optional)
- 2 sprigs lovage
Instructions
- 1. Rinse the mussels under running water.
- 2. Discard any mussels that are already open.
- 3. Peel the onion and chop it roughly.
- 4. Peel the carrots and slice them.
- 5. Wash the chicory and cut it into thin strips.
- 6. Clean the mushrooms and chop them if necessary.
- 7. Put the wine, vegetable broth, onion, bay leaf, one sprig of lovage, carrots, chicory, salt, pepper, and mushrooms into a pot with a steamer insert.
- 8. Bring the mixture in the pot to a boil.
- 9. Place the mussels in a sieve insert over the pot.
- 10. Cover the pot and steam the mussels for 2 to 3 minutes.
- 11. Discard any mussels that remain closed after steaming.
- 12. Divide the mussels along with the broth into small bowls.
- 13. Garnish the dish with fresh lovage.
- 14. Serve the mussels with fresh white bread.
