  1. 1. Rinse the mussels under running water.
  2. 2. Discard any mussels that are already open.
  3. 3. Peel the onion and chop it roughly.
  4. 4. Peel the carrots and slice them.
  5. 5. Wash the chicory and cut it into thin strips.
  6. 6. Clean the mushrooms and chop them if necessary.
  7. 7. Put the wine, vegetable broth, onion, bay leaf, one sprig of lovage, carrots, chicory, salt, pepper, and mushrooms into a pot with a steamer insert.
  8. 8. Bring the mixture in the pot to a boil.
  9. 9. Place the mussels in a sieve insert over the pot.
  10. 10. Cover the pot and steam the mussels for 2 to 3 minutes.
  11. 11. Discard any mussels that remain closed after steaming.
  12. 12. Divide the mussels along with the broth into small bowls.
  13. 13. Garnish the dish with fresh lovage.
  14. 14. Serve the mussels with fresh white bread.
