🍽️ Noodle Salad with Steamed Chicken Breast and Orange

Ingredients
- 1 Organic Orange
- 125 g Soba Noodles (Japanese buckwheat noodles)
- Sea salt
- 1 tsp Sesame oil (+ a little for the steamer insert)
- 2 Spring onions
- 60 g Sprout mix
- 1 tbsp Soy sauce
- Pepper
- 2 tbsp Unhulled sesame seeds
- 320 g Chicken breast fillet (2 Chicken breast fillets)
Instructions
- 1. Wash the orange under hot water.
- 2. Dry the orange with a cloth.
- 3. Peel the orange peel very thinly using a vegetable peeler.
- 4. Cut the orange peel into very thin strips.
- 5. Squeeze the orange and collect the juice.
- 6. Cook the noodles in salted water according to the package instructions.
- 7. Add the orange peel to the noodles 30 seconds before the end of the cooking time.
- 8. Drain the noodles and the peel.
- 9. Rinse the noodles with cold water to stop the cooking process.
- 10. Mix the noodles and the orange peel with sesame oil.
- 11. Clean the spring onions and wash them.
- 12. Slice the spring onions diagonally as thinly as possible.
- 13. Rinse the sprouts with cold water or wash them in cold water.
- 14. Let the sprouts drain well.
- 15. Mix the onions and the sprouts with the noodles.
- 16. Season the mixture with soy sauce, pepper, and orange juice to your taste.
- 17. Let the salad marinate for 30 minutes.
- 18. Roast the sesame seeds in a pan.
- 19. Remove the sesame seeds from the pan.
- 20. Let the sesame seeds cool down.
- 21. Grind the sesame seeds with a little salt in a mortar to a powder.
- 22. Wash the chicken breasts.
- 23. Dry the chicken breasts with a cloth.
- 24. Place the chicken breasts in a lightly oiled steamer insert.
- 25. Place the insert in a pot with hot water.
- 26. Make sure the meat does not touch the water.
- 27. Steam the chicken breasts covered at medium heat for 15 minutes.
- 28. Remove the chicken breasts from the steamer.
- 29. Slice the meat.
- 30. Serve the noodle salad on plates.
- 31. Place the chicken slices on the salad.
- 32. Sprinkle everything with the sesame salt.
- 33. Serve the dish.
