🍽️ Steamed Spring Rolls with Shrimp and Vegetables

Ingredients
- 1 carrot
- 50 g bean sprouts
- 6 sprigs Thai basil
- 4 spring onions
- 12 sheets rice paper
- 60 g rice noodles
- salt
- 200 g deep-sea shrimp (peeled and cooked)
- 3 tbsp chili sauce
Instructions
- 1. Wash the carrots thoroughly.
- 2. Peel the carrots.
- 3. Cut each carrot in half crosswise.
- 4. Slice the carrot halves lengthwise into thin slices.
- 5. Cut the slices into fine strips.
- 6. Wash the sprouts in a sieve.
- 7. Let the sprouts drain well.
- 8. Wash the basil.
- 9. Shake the basil dry.
- 10. Pluck the basil leaves from the stems.
- 11. Remove the tough ends of the spring onions.
- 12. Wash the spring onions.
- 13. Slice the spring onions diagonally into thin rounds.
- 14. Take two damp kitchen towels.
- 15. Place a rice paper sheet between the two damp towels.
- 16. Let the rice paper soften for about two minutes.
- 17. Bring water to a boil in a pot.
- 18. Add salt to the boiling water.
- 19. Soak the rice noodles according to package instructions in the boiling salted water.
- 20. Drain the noodles in a sieve.
- 21. Rinse the noodles under cold water.
- 22. Let the noodles drain well.
- 23. Lay a softened rice paper sheet flat.
- 24. Place two basil leaves in the center of the paper.
- 25. Place two shrimp on top of the basil leaves.
- 26. Add a portion of the rice noodles on top.
- 27. Add the sliced spring onions.
- 28. Add a handful of sprouts.
- 29. Place the carrot strips on top.
- 30. Drizzle some chili sauce over the filling.
- 31. Fold the top edge of the rice paper over the filling.
- 32. Fold the bottom edge of the rice paper over the filling.
- 33. Roll the sheet up tightly.
- 34. Repeat this until you have twelve rolls.
- 35. Bring water to a boil again in a large pot.
- 36. Place the spring rolls in a steamer insert.
- 37. Place the steamer insert in the pot over the boiling water.
- 38. Cover the pot.
- 39. Steam the rolls for four to five minutes in the hot steam.
- 40. Serve the rolls immediately.
