  3. 3. Cut each carrot in half crosswise.
  4. 4. Slice the carrot halves lengthwise into thin slices.
  5. 5. Cut the slices into fine strips.
  6. 6. Wash the sprouts in a sieve.
  7. 7. Let the sprouts drain well.
  8. 8. Wash the basil.
  9. 9. Shake the basil dry.
  10. 10. Pluck the basil leaves from the stems.
  11. 11. Remove the tough ends of the spring onions.
  12. 12. Wash the spring onions.
  13. 13. Slice the spring onions diagonally into thin rounds.
  14. 14. Take two damp kitchen towels.
  15. 15. Place a rice paper sheet between the two damp towels.
  16. 16. Let the rice paper soften for about two minutes.
  17. 17. Bring water to a boil in a pot.
  18. 18. Add salt to the boiling water.
  19. 19. Soak the rice noodles according to package instructions in the boiling salted water.
  20. 20. Drain the noodles in a sieve.
  21. 21. Rinse the noodles under cold water.
  22. 22. Let the noodles drain well.
  23. 23. Lay a softened rice paper sheet flat.
  24. 24. Place two basil leaves in the center of the paper.
  25. 25. Place two shrimp on top of the basil leaves.
  26. 26. Add a portion of the rice noodles on top.
  27. 27. Add the sliced spring onions.
  28. 28. Add a handful of sprouts.
  29. 29. Place the carrot strips on top.
  30. 30. Drizzle some chili sauce over the filling.
  31. 31. Fold the top edge of the rice paper over the filling.
  32. 32. Fold the bottom edge of the rice paper over the filling.
  33. 33. Roll the sheet up tightly.
  34. 34. Repeat this until you have twelve rolls.
  35. 35. Bring water to a boil again in a large pot.
  36. 36. Place the spring rolls in a steamer insert.
  37. 37. Place the steamer insert in the pot over the boiling water.
  38. 38. Cover the pot.
  39. 39. Steam the rolls for four to five minutes in the hot steam.
  40. 40. Serve the rolls immediately.
