  1. 1. Turn on the oven and set it to 200 degrees Celsius fan mode.
  2. 2. Rinse the trout fillets briefly under running water and then pat them dry with a kitchen towel.
  3. 3. Peel the potatoes and slice them into thin rounds.
  4. 4. Peel the carrot and slice it into thin rounds or use a grater to shred it into fine strips.
  5. 5. Peel the onion and cut it into thin strips.
  6. 6. Take four sheets of parchment paper and brush the center of each sheet with a little oil.
  7. 7. Place the trout fillets skin-side down on the prepared paper sheets.
  8. 8. Drizzle a little oil over the fish.
  9. 9. Add some lemon juice.
  10. 10. Season the fillets with salt and pepper.
  11. 11. Pick fresh dill leaves and sprinkle them over the fish.
  12. 12. Place the potato slices in a wavy, overlapping pattern on top of the fillets.
  13. 13. Distribute the carrot slices evenly on top.
  14. 14. Season the vegetables again with salt and pepper.
  15. 15. Drizzle a little olive oil over the vegetables.
  16. 16. Fold the edges of the parchment paper together and seal the packet well so that it is airtight.
  17. 17. Place the parchment packets on a rack in the oven.
  18. 18. Bake the trout for 20 to 25 minutes.
  19. 19. Sprinkle the finished dish with fresh parsley before serving.
