  2. 2. Parboil the sweet potato slices in boiling salted water for about two minutes (this is called blanching).
  3. 3. Drain the sweet potatoes and let them dry well.
  4. 4. Peel the onions and garlic and dice them finely.
  5. 5. Wash the meat and pat it dry with a kitchen towel.
  6. 6. Cut the meat into bite-sized pieces.
  7. 7. Heat oil in a large pan and sear the meat well on all sides.
  8. 8. Season the meat with salt, pepper, paprika powder, and chili.
  9. 9. Remove the meat from the pan and set it aside.
  10. 10. Add a little more oil to the pan and fry the onion and garlic cubes in the pan juices.
  11. 11. Serve the dish rustic-style in the pan.
