🍽️ Beef Fillet in Bacon Wrap

Ingredients
- 1.2 kg beef fillet (from the center piece, in bacon wrap; have the butcher prepare and tie it)
- 250 g colorful mixed vegetable cubes (carrot, celery, zucchini, parsley root... to taste)

Instructions
- 1. Preheat the oven to 200 degrees. Place the meat in a greased casserole dish and roast it for about 35 minutes.
- 2. Let the meat rest for 10 minutes in the turned-off oven before serving. Blanch the vegetable cubes for approx. 3 minutes in boiling salted water (cook briefly in boiling water), drain and let them drip dry.
- 3. Arrange the finished fillet on a plate and garnish with the vegetable cubes and parsley leaves.
