  1. 1. Peel the onions and cut them in half.
  2. 2. Wash the tomatoes thoroughly.
  3. 3. Cut the tomatoes in half if they are large, or leave them whole.
  4. 4. Wash the sage leaves.
  5. 5. Pat the sage leaves dry with a kitchen towel.
  6. 6. Chop the sage leaves finely.
  7. 7. Peel the garlic clove.
  8. 8. Press the garlic through a garlic press.
  9. 9. Heat the oil in a pan.
  10. 10. Place the onions and tomatoes in the hot pan with the cut side facing down.
  11. 11. Fry the vegetables on high heat until they get color.
  12. 12. Reduce the heat to a medium level.
  13. 13. Add the chopped sage leaves to the pan.
  14. 14. Fold the garlic into the vegetables.
  15. 15. Fry everything for another 3 to 5 minutes.
  16. 16. Season the dish with salt.
  17. 17. Add a pinch of chili flakes.
  18. 18. Toss the olives through the vegetables.
  19. 19. Serve the vegetables as an appetizer or side dish.
