🍽️ Crispy Mediterranean Vegetables

Ingredients
- 300 g small red onions
- 250 g small yellow tomatoes (e.g. date tomatoes)
- 4 sage leaves
- 2 garlic cloves
- 2 tbsp olive oil
- sea salt
- chili powder
- 60 g green olives
Instructions
- 1. Peel the onions and cut them in half.
- 2. Wash the tomatoes thoroughly.
- 3. Cut the tomatoes in half if they are large, or leave them whole.
- 4. Wash the sage leaves.
- 5. Pat the sage leaves dry with a kitchen towel.
- 6. Chop the sage leaves finely.
- 7. Peel the garlic clove.
- 8. Press the garlic through a garlic press.
- 9. Heat the oil in a pan.
- 10. Place the onions and tomatoes in the hot pan with the cut side facing down.
- 11. Fry the vegetables on high heat until they get color.
- 12. Reduce the heat to a medium level.
- 13. Add the chopped sage leaves to the pan.
- 14. Fold the garlic into the vegetables.
- 15. Fry everything for another 3 to 5 minutes.
- 16. Season the dish with salt.
- 17. Add a pinch of chili flakes.
- 18. Toss the olives through the vegetables.
- 19. Serve the vegetables as an appetizer or side dish.
