🍽️ Crispy Rack of Lamb with Pearl Onions

Ingredients
- 1 kg Lamb rack (ready for kitchen)
- 3 tbsp Oil
- 2 tbsp Herbs of Provence
- Pepper (from the mill)
- Salt
- 4 Garlic cloves (with skin)
- 5 Pearl onions
- 0.5 cup Lamb stock
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Place a small baking tray directly into the oven along with the rack of lamb to let it heat up.
- 3. Scrape the bone ends of the rack of lamb clean with a knife so that no meat residue remains attached.
- 4. Divide the rack of lamb into several individual pieces, with each piece containing about four ribs.
- 5. Season the lamb pieces evenly with pepper, salt, and Provence herbs.
- 6. Peel the pearl onions and then halve them.
- 7. Heat olive oil in a frying pan.
- 8. Fry the lamb pieces together with the garlic and halved onions in the hot oil until browned on all sides.
- 9. Deglaze the pan with lamb stock.
- 10. Transfer all ingredients to the preheated small baking tray.
- 11. Place the tray on the middle rack in the preheated oven.
- 12. Roast the lamb for about 12 to 15 minutes.
- 13. Remove the tray from the oven and cover the meat with aluminum foil.
- 14. Let the meat rest in the turned-off oven for another 10 minutes.
