  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Place a small baking tray directly into the oven along with the rack of lamb to let it heat up.
  3. 3. Scrape the bone ends of the rack of lamb clean with a knife so that no meat residue remains attached.
  4. 4. Divide the rack of lamb into several individual pieces, with each piece containing about four ribs.
  5. 5. Season the lamb pieces evenly with pepper, salt, and Provence herbs.
  6. 6. Peel the pearl onions and then halve them.
  7. 7. Heat olive oil in a frying pan.
  8. 8. Fry the lamb pieces together with the garlic and halved onions in the hot oil until browned on all sides.
  9. 9. Deglaze the pan with lamb stock.
  10. 10. Transfer all ingredients to the preheated small baking tray.
  11. 11. Place the tray on the middle rack in the preheated oven.
  12. 12. Roast the lamb for about 12 to 15 minutes.
  13. 13. Remove the tray from the oven and cover the meat with aluminum foil.
  14. 14. Let the meat rest in the turned-off oven for another 10 minutes.
