  1. 1. Wash the oranges thoroughly and dry them.
  2. 2. Peel the fruits.
  3. 3. Cut the peel of one orange into very thin strips.
  4. 4. Remove the flesh from the membranes.
  5. 5. Cut the fillets in half crosswise.
  6. 6. Wash the cranberries.
  7. 7. Remove any remaining parts and sort them.
  8. 8. Bring the juice together with the jam sugar to a boil.
  9. 9. Add the cranberries, the orange fillets, and the peel strips.
  10. 10. Let the mixture come to a boil again.
  11. 11. Simmer for 3 minutes.
  12. 12. Remove the pot from the heat.
  13. 13. Fill the jam immediately into the prepared jars.
  14. 14. Seal them tightly.
  15. 15. Let them cool upside down.
  16. 16. Rinse the meat under cold water.
  17. 17. Pat it dry.
  18. 18. Season it with pepper.
  19. 19. Pluck the needles from the rosemary.
  20. 20. Chop them finely.
  21. 21. Peel the garlic.
  22. 22. Dice it finely.
  23. 23. Put the flour on a flat plate.
  24. 24. Turn the meat in it so that it is completely covered.
  25. 25. Heat the oil in a large pan.
  26. 26. Fry the lamb fillet briefly and vigorously on all sides.
  27. 27. Season the meat with salt.
  28. 28. Add the rosemary and garlic.
  29. 29. Continue to fry the fillets over low heat for a few minutes.
  30. 30. Remove them from the pan.
  31. 31. Wrap them in aluminum foil.
  32. 32. Keep them warm to allow them to rest.
  33. 33. Serve the jam with the lamb fillets.
