🍽️ Fried Lamb with Jam

Ingredients
- 2 Oranges
- 500 ml Orange juice
- 500 g Jam sugar (2:1)
- 500 g Cranberries
- 700 g Lamb fillet
- Pepper (from the mill)
- 1 sprig Rosemary
- 2 Garlic cloves
- Salt
- 3 tbsp Flour
- 1 tbsp Olive oil
- 1 tbsp Butter
Instructions
- 1. Wash the oranges thoroughly and dry them.
- 2. Peel the fruits.
- 3. Cut the peel of one orange into very thin strips.
- 4. Remove the flesh from the membranes.
- 5. Cut the fillets in half crosswise.
- 6. Wash the cranberries.
- 7. Remove any remaining parts and sort them.
- 8. Bring the juice together with the jam sugar to a boil.
- 9. Add the cranberries, the orange fillets, and the peel strips.
- 10. Let the mixture come to a boil again.
- 11. Simmer for 3 minutes.
- 12. Remove the pot from the heat.
- 13. Fill the jam immediately into the prepared jars.
- 14. Seal them tightly.
- 15. Let them cool upside down.
- 16. Rinse the meat under cold water.
- 17. Pat it dry.
- 18. Season it with pepper.
- 19. Pluck the needles from the rosemary.
- 20. Chop them finely.
- 21. Peel the garlic.
- 22. Dice it finely.
- 23. Put the flour on a flat plate.
- 24. Turn the meat in it so that it is completely covered.
- 25. Heat the oil in a large pan.
- 26. Fry the lamb fillet briefly and vigorously on all sides.
- 27. Season the meat with salt.
- 28. Add the rosemary and garlic.
- 29. Continue to fry the fillets over low heat for a few minutes.
- 30. Remove them from the pan.
- 31. Wrap them in aluminum foil.
- 32. Keep them warm to allow them to rest.
- 33. Serve the jam with the lamb fillets.
