🍽️ Crispy Salmon with Fresh Herb Sauce

Ingredients
- 1 bunch parsley
- 1 bunch dill
- 1 bunch chervil
- 1 bunch chives
- 6 tbsp salad cream
- 8 tbsp yogurt (0.3 % fat)
- 0.5 small lemon
- salt
- pepper
- 720 g salmon fillet (with skin; 4 salmon fillets)
- 1 tbsp olive oil
Instructions
- 1. Rinse the fresh herbs under cold water.
- 2. Shake the herbs dry.
- 3. Take four stalks of each herb variety.
- 4. Place these stalks on a small plate and set them aside for garnish.
- 5. Pluck the leaves from the parsley.
- 6. Pluck the fronds from the chervil.
- 7. Pluck the leaves from the dill.
- 8. Place the picked plant parts on a cutting board.
- 9. Roughly chop the herbs with a large knife.
- 10. Cut the chives into fine rings.
- 11. Put the chopped herbs into a tall container.
- 12. Add the salad cream.
- 13. Add the yogurt.
- 14. Get a hand blender ready.
- 15. Blend the ingredients until medium-fine.
- 16. Take half a lemon.
- 17. Squeeze the lemon.
- 18. Measure one tablespoon of lemon juice.
- 19. Stir the lemon juice into the herb sauce.
- 20. Season the sauce with salt.
- 21. Season the sauce with pepper.
- 22. Rinse the salmon fillets under cold water.
- 23. Pat the salmon fillets dry with a kitchen towel.
- 24. Salt the salmon fillets.
- 25. Pepper the salmon fillets.
- 26. Get a frying pan ready.
- 27. Put the oil in the pan.
- 28. Heat the oil in the pan over medium heat.
- 29. Place the salmon fillets in the hot pan.
- 30. Make sure the skin side is facing down.
- 31. Fry the salmon for four to five minutes.
- 32. Turn the salmon fillets over.
- 33. Fry the salmon for another one to two minutes.
- 34. Get the plates ready.
- 35. Spread the herb sauce onto the plates.
- 36. Place one salmon fillet in the center of the sauce.
- 37. Take the reserved herb stalks.
- 38. Garnish the salmon with the herbs.
- 39. Serve the dish.
