🍽️ Pan-fried Salmon with Ribbon Noodles

Ingredients
- 1 large vegetable onion
- 1 garlic clove
- 350 g tagliatelle
- 800 g salmon fillet
- 1 tsp flour
- 2 tbsp ghee
- 50 ml vegetable broth
- 2 tbsp white wine
- 1 tbsp sage (chopped)
- 2 tbsp chive rings
- salt
- pepper
Instructions
- 1. Peel the onion and cut it into thin wedges.
- 2. Peel the garlic cloves and chop them finely.
- 3. Cook the noodles in plenty of salted water according to the package instructions until al dente.
- 4. Dust the salmon with flour.
- 5. Heat ghee (clarified butter) in a frying pan.
- 6. Fry the salmon slowly on both sides in the pan.
- 7. Cook the fish for about 3 to 4 minutes per side.
- 8. The salmon should remain slightly translucent inside.
- 9. Remove the fish from the pan and set it aside.
- 10. Sauté the onions in the remaining fat until translucent.
- 11. Add the sage leaves.
- 12. Deglaze the pan with broth and wine.
- 13. Bring the sauce to a boil.
- 14. Add the drained noodles to the sauce.
- 15. Mix the noodles thoroughly with the sauce.
- 16. Plate the noodles onto serving plates.
- 17. Place the salmon pieces on top of the noodles.
- 18. Sprinkle the dish with chives.
- 19. Serve the salmon immediately.
