  1. 1. Peel the onion and cut it into thin wedges.
  2. 2. Peel the garlic cloves and chop them finely.
  3. 3. Cook the noodles in plenty of salted water according to the package instructions until al dente.
  4. 4. Dust the salmon with flour.
  5. 5. Heat ghee (clarified butter) in a frying pan.
  6. 6. Fry the salmon slowly on both sides in the pan.
  7. 7. Cook the fish for about 3 to 4 minutes per side.
  8. 8. The salmon should remain slightly translucent inside.
  9. 9. Remove the fish from the pan and set it aside.
  10. 10. Sauté the onions in the remaining fat until translucent.
  11. 11. Add the sage leaves.
  12. 12. Deglaze the pan with broth and wine.
  13. 13. Bring the sauce to a boil.
  14. 14. Add the drained noodles to the sauce.
  15. 15. Mix the noodles thoroughly with the sauce.
  16. 16. Plate the noodles onto serving plates.
  17. 17. Place the salmon pieces on top of the noodles.
  18. 18. Sprinkle the dish with chives.
  19. 19. Serve the salmon immediately.
