🍽️ Crispy Chicken with Olives and Lemon

Ingredients
- 1 chicken (approx. 1,4 kg)
- salt
- pepper (from the mill)
- 2 unwaxed lemons
- 3 tbsp black, pitted olives (jar)
- 1 tbsp capers (jar)
- 1 bunch parsley
- 2 tbsp olive oil
- 150 ml dry white wine
Instructions
- 1. Rinse the chicken under running water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut the chicken into 8 equal pieces.
- 4. Season all meat pieces generously with salt and pepper.
- 5. Rinse the lemons under hot water.
- 6. Dry the lemons thoroughly.
- 7. Cut the lemons into small pieces.
- 8. Let the olives and capers drain well.
- 9. Wash the parsley under running water.
- 10. Shake the parsley dry.
- 11. Pick the parsley leaves off the stems.
- 12. Finely chop the parsley leaves.
- 13. Heat the oil in a large pan.
- 14. Fry the chicken pieces on all sides until golden brown.
- 15. Add the lemon pieces, olives, and capers to the pan.
- 16. Deglaze the mixture with the wine.
- 17. Reduce the heat to medium.
- 18. Place the lid on the pan.
- 19. Simmer the dish for approx. 20 to 25 minutes.
- 20. Sprinkle the finished chicken with the chopped parsley.
- 21. Serve the dish immediately while warm.
