🍽️ Crispy Herb Roast Chicken with Honey Glaze

Ingredients
- 1 chicken (approx. 1.2 kg)
- 2 onions
- 1 bunch fresh herbs (e.g. sage, rosemary, approx. 20 g)
- salt
- pepper
- 1 tbsp rapeseed oil (for the baking sheet)
- 1 tbsp honey
- 3 tbsp soy sauce
- 1 tsp paprika powder (hot)
Instructions
- 1. Rinse the chicken under cold running water and pat it completely dry with kitchen paper.
- 2. Peel the onions and dice them into small cubes.
- 3. Wash the fresh herbs, shake off excess water, and chop them roughly.
- 4. Take two-thirds of the chopped herbs and the onion cubes and stuff this mixture into the cavity of the chicken.
- 5. Close the opening of the chicken with kitchen twine to keep the stuffing inside.
- 6. Season the outside of the chicken generously with salt and pepper.
- 7. Brush a baking tray lightly with oil and place the chicken on it.
- 8. Preheat the oven to 180 degrees Celsius fan (or 160 degrees Celsius conventional heat, or gas mark 2–3).
- 9. Roast the chicken in the preheated oven for about 50 minutes.
- 10. While the chicken is roasting, whisk honey, soy sauce, and paprika powder together in a small bowl to make a glaze.
- 11. Take the chicken out of the oven briefly and brush it completely with the honey glaze.
- 12. Return the chicken to the oven and bake for another 10 to 15 minutes until golden brown.
- 13. Remove the chicken from the oven, sprinkle it with the remaining fresh herbs, and serve hot.
