  1. 1. Rinse the chicken under cold running water and pat it completely dry with kitchen paper.
  2. 2. Peel the onions and dice them into small cubes.
  3. 3. Wash the fresh herbs, shake off excess water, and chop them roughly.
  4. 4. Take two-thirds of the chopped herbs and the onion cubes and stuff this mixture into the cavity of the chicken.
  5. 5. Close the opening of the chicken with kitchen twine to keep the stuffing inside.
  6. 6. Season the outside of the chicken generously with salt and pepper.
  7. 7. Brush a baking tray lightly with oil and place the chicken on it.
  8. 8. Preheat the oven to 180 degrees Celsius fan (or 160 degrees Celsius conventional heat, or gas mark 2–3).
  9. 9. Roast the chicken in the preheated oven for about 50 minutes.
  10. 10. While the chicken is roasting, whisk honey, soy sauce, and paprika powder together in a small bowl to make a glaze.
  11. 11. Take the chicken out of the oven briefly and brush it completely with the honey glaze.
  12. 12. Return the chicken to the oven and bake for another 10 to 15 minutes until golden brown.
  13. 13. Remove the chicken from the oven, sprinkle it with the remaining fresh herbs, and serve hot.
