  1. 1. Drizzle lemon juice over the fish fillets.
  2. 2. Season the fish with salt and pepper.
  3. 3. Heat butter and olive oil in a frying pan.
  4. 4. Fry the fish fillets in the pan until golden brown on both sides.
  5. 5. Peel the onions.
  6. 6. Cut the onions in half lengthwise.
  7. 7. Slice the onions into thin strips.
  8. 8. Wash the tomatoes.
  9. 9. Quarter the tomatoes.
  10. 10. Remove the core from the tomatoes.
  11. 11. Dice the tomatoes into small cubes.
  12. 12. Sauté the onion strips in the remaining butter until translucent.
  13. 13. Season the onions with a pinch of salt.
  14. 14. Pour some water into the pan.
  15. 15. Cover the pan.
  16. 16. Simmer the onions on low heat for 5 minutes.
  17. 17. Stir Creme Fraiche into the onion sauce.
  18. 18. Fold in the tomato cubes.
  19. 19. Add fresh dill tips to the sauce.
  20. 20. Serve the onion sauce alongside the fried fish fillets.
