🍽️ Fried Goat Cheese with Arugula

Ingredients
- 8 cherry tomatoes
- 8 shallots
- 200 g goat cheese (log)
- 0.5 whole wheat baguette (cut into 8 slices)
- 60 g arugula (1 bunch)
- 2 tbsp olive oil
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes in half.
- 3. Peel the shallots.
- 4. Cut the shallots in half as well.
- 5. Line a baking tray with baking paper.
- 6. Distribute the tomatoes and shallots evenly on the tray.
- 7. Preheat the oven to 200 degrees Celsius conventional heat (180 degrees Celsius fan-forced or gas mark 3).
- 8. Bake the vegetables in the oven for about 20 minutes.
- 9. Cut the goat cheese into 8 equal slices.
- 10. Place the cheese slices on the baguette slices.
- 11. Remove the baking tray from the oven after 20 minutes.
- 12. Place the baguettes with the cheese on the same tray alongside the vegetables.
- 13. Bake everything for another 5 minutes in the oven.
- 14. Pick the arugula leaves off any stems.
- 15. Wash the arugula thoroughly.
- 16. Spin the arugula dry.
- 17. Distribute the arugula onto four plates.
- 18. Place the baked tomatoes and shallots on top of the arugula.
- 19. Place two slices of the fried goat cheese on each dish.
- 20. Drizzle some olive oil over the finished dish.
