  3. 3. Peel the shallots.
  4. 4. Cut the shallots in half as well.
  5. 5. Line a baking tray with baking paper.
  6. 6. Distribute the tomatoes and shallots evenly on the tray.
  7. 7. Preheat the oven to 200 degrees Celsius conventional heat (180 degrees Celsius fan-forced or gas mark 3).
  8. 8. Bake the vegetables in the oven for about 20 minutes.
  9. 9. Cut the goat cheese into 8 equal slices.
  10. 10. Place the cheese slices on the baguette slices.
  11. 11. Remove the baking tray from the oven after 20 minutes.
  12. 12. Place the baguettes with the cheese on the same tray alongside the vegetables.
  13. 13. Bake everything for another 5 minutes in the oven.
  14. 14. Pick the arugula leaves off any stems.
  15. 15. Wash the arugula thoroughly.
  16. 16. Spin the arugula dry.
  17. 17. Distribute the arugula onto four plates.
  18. 18. Place the baked tomatoes and shallots on top of the arugula.
  19. 19. Place two slices of the fried goat cheese on each dish.
  20. 20. Drizzle some olive oil over the finished dish.
