🍽️ Pan-fried Zander on Spinach

Ingredients
- 2 Zander fillets (approx. 200 g each, with skin)
- salt
- pepper (from the mill)
- 1 tbsp flour
- 2 tbsp butter
- 600 g spinach
- 1 garlic clove
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 4 tbsp crème fraîche
- 4 tsp capers
Instructions
- 1. Thoroughly clean the spinach, remove thick stems, and let it drain well. Peel the garlic.
- 2. Season the Zander with salt and pepper and dust the flesh side with a little flour.
- 3. Heat the olive oil in a pan, press in the garlic, add the spinach, and sauté while stirring for 3 - 4 minutes until it has wilted. Season with salt and pepper and stir in the lemon juice.
- 4. Heat the butter in another pan and fry the Zander fillets skin-side down over medium heat for about 5 minutes.
- 5. To serve, distribute the spinach on plates, place the Zander fillets on top, add one tablespoon of crème fraîche to each, and sprinkle with capers.
