  1. 1. Thoroughly clean the spinach, remove thick stems, and let it drain well. Peel the garlic.
  2. 2. Season the Zander with salt and pepper and dust the flesh side with a little flour.
  3. 3. Heat the olive oil in a pan, press in the garlic, add the spinach, and sauté while stirring for 3 - 4 minutes until it has wilted. Season with salt and pepper and stir in the lemon juice.
  4. 4. Heat the butter in another pan and fry the Zander fillets skin-side down over medium heat for about 5 minutes.
  5. 5. To serve, distribute the spinach on plates, place the Zander fillets on top, add one tablespoon of crème fraîche to each, and sprinkle with capers.
