  1. 1. Whisk the bean paste, 2 tablespoons of water, fish sauce, and honey together in a small bowl until smooth.
  2. 2. Thoroughly wash the water spinach and shake off excess water.
  3. 3. Cut the water spinach into pieces about 4 centimeters long.
  4. 4. Peel the garlic cloves and chop them finely.
  5. 5. Peel the shallots and dice them finely.
  6. 6. Heat a wok or large frying pan over high heat.
  7. 7. Add the oil to the hot wok and swirl it around to coat the surface.
  8. 8. Add the water spinach to the wok and stir-fry for about 1 minute, stirring constantly, until it wilts.
  9. 9. Add the chopped garlic and diced shallots and stir-fry briefly.
  10. 10. Pour the prepared sauce over the vegetables.
  11. 11. Stir everything for another 30 seconds until the sauce thickens and the dish is ready.
