🍽️ Quick-fried Tuna on Savory Turnip Stew

Ingredients
- 750 g swede
- 1 tbsp butter
- 1 onion
- 2 tbsp red pepper cubes
- 1 tbsp chopped parsley
- 100 ml whipping cream
- 150 ml vegetable broth
- 1 tbsp finely chopped parsley
- 2 tbsp white balsamic vinegar
- 600 g tuna steak (4 tuna steaks)
- coarse black pepper
- fine sea salt

Instructions
- 1. Peel the turnip and cut it into very small cubes.
- 2. Peel the onion and dice it very finely as well.
- 3. Heat butter in a pan and sauté the onion cubes in it.
- 4. Add the turnip cubes to the onion and sauté them briefly together.
- 5. Deglaze the vegetables with broth.
- 6. Cook the vegetables without a lid until they are tender-crisp and the liquid has almost completely evaporated.
- 7. Stir the bell pepper cubes and the cream into the vegetables.
- 8. Let the vegetable mixture cool down slightly.
- 9. Pat the tuna steaks dry with a kitchen towel.
- 10. Put the coarse pepper into a small bowl.
- 11. Press the edges of the tuna steaks into the pepper so they are coated.
- 12. Heat oil in a pan.
- 13. Fry the tuna steaks in the hot oil very quickly on both sides.
- 14. Ensure that the fish is still raw but warm inside.
- 15. Season the vegetables with salt and aceto (vinegar-like seasoning).
- 16. Stir the parsley into the seasoned vegetables.
- 17. Season the tuna steaks with sea salt.
- 18. Serve the tuna steaks on top of the lukewarm vegetables.
- 19. Garnish the dish with lemon zest as desired.
