🍽️ Pan-seared tuna with avocado vegetable sauce

Ingredients
- 200 g Porcini mushrooms
- 0.5 bunch Radishes
- 300 g Green beans
- 1.5 Avocados
- 200 g Sour cream
- 100 Crème fraîche
- 0.5 bunch Chives
- 0.5 Unpeeled Lemon (juice)
- Salt
- Pepper (from the mill)
- 1 Clove of garlic, chopped
- 2 tbsp Grape seed oil
- 1 Dried chili pepper (crushed)
- 4 Tuna steaks (ready for cooking, approx. 180 g each)
- 2 tbsp Sunflower oil
- 2 tbsp Keta caviar
Instructions
- 1. Clean the mushrooms and cut them into small cubes.
- 2. Wash the radishes and cut them into small pieces as well.
- 3. Wash the beans and remove the tough ends.
- 4. Cut the beans in half.
- 5. Blanch the beans in salted water for about 8 minutes (cook briefly in boiling water).
- 6. Rinse the beans immediately under cold water to stop the cooking process.
- 7. Let the beans drain well.
- 8. Cut the avocado in length and remove the pit.
- 9. Peel the avocado.
- 10. Puree the avocado finely with sour cream, crème fraîche, and lemon juice.
- 11. Chop the chives, but keep a few stalks for decoration.
- 12. Stir the chopped chives into the avocado mixture.
- 13. Season the sauce with salt and pepper to taste.
- 14. Heat grape seed oil in a pan.
- 15. Sauté the mushroom cubes and garlic in the hot oil.
- 16. Add the beans and radishes to the pan.
- 17. Toss the vegetables for about 2 minutes until they are still crisp.
- 18. Season the vegetables with chili and salt.
- 19. Wash the tuna and pat it dry with kitchen paper.
- 20. Season the tuna with salt and pepper.
- 21. Heat sunflower oil in a separate pan.
- 22. Pan-sear the tuna for about 1 minute on each side.
- 23. Adjust the cooking time if you prefer it differently.
- 24. Place the vegetables in the center of the plates.
- 25. Place the tuna on top of the vegetables.
- 26. Spread the avocado sauce around the meat.
- 27. Place salmon roe on the tuna.
- 28. Sprinkle the dish with a little pepper.
- 29. Garnish with the reserved chive stalks.
- 30. Serve the dish immediately.
