  1. 1. Clean the mushrooms and cut them into small cubes.
  2. 2. Wash the radishes and cut them into small pieces as well.
  3. 3. Wash the beans and remove the tough ends.
  4. 4. Cut the beans in half.
  5. 5. Blanch the beans in salted water for about 8 minutes (cook briefly in boiling water).
  6. 6. Rinse the beans immediately under cold water to stop the cooking process.
  7. 7. Let the beans drain well.
  8. 8. Cut the avocado in length and remove the pit.
  9. 9. Peel the avocado.
  10. 10. Puree the avocado finely with sour cream, crème fraîche, and lemon juice.
  11. 11. Chop the chives, but keep a few stalks for decoration.
  12. 12. Stir the chopped chives into the avocado mixture.
  13. 13. Season the sauce with salt and pepper to taste.
  14. 14. Heat grape seed oil in a pan.
  15. 15. Sauté the mushroom cubes and garlic in the hot oil.
  16. 16. Add the beans and radishes to the pan.
  17. 17. Toss the vegetables for about 2 minutes until they are still crisp.
  18. 18. Season the vegetables with chili and salt.
  19. 19. Wash the tuna and pat it dry with kitchen paper.
  20. 20. Season the tuna with salt and pepper.
  21. 21. Heat sunflower oil in a separate pan.
  22. 22. Pan-sear the tuna for about 1 minute on each side.
  23. 23. Adjust the cooking time if you prefer it differently.
  24. 24. Place the vegetables in the center of the plates.
  25. 25. Place the tuna on top of the vegetables.
  26. 26. Spread the avocado sauce around the meat.
  27. 27. Place salmon roe on the tuna.
  28. 28. Sprinkle the dish with a little pepper.
  29. 29. Garnish with the reserved chive stalks.
  30. 30. Serve the dish immediately.
