🍽️ Crispy Celery Strips with Capers Dip

Ingredients
- 2 lemons (juice and grated zest)
- 1 medium celeriac
- 250 ml oil
- 3 eggs
- 150 g flour
- salt
- pepper (from the mill)
- 1 clove of garlic
- 1 shallot
- 3 tbsp caper berries
- paprika powder
- 100 ml olive oil
- 1 tbsp mustard
- 4 tbsp white wine vinegar
Instructions
- 1. Peel the celery thoroughly.
- 2. Cut the celery into quarters.
- 3. Shred the celery pieces into thin slices.
- 4. Add the lemon juice and lemon zest.
- 5. Mix everything well together.
- 6. Heat the oil in a pan.
- 7. Whisk the eggs in a deep plate.
- 8. Place the flour on a flat plate.
- 9. Let the celery drain.
- 10. Coat the celery pieces in the eggs in batches.
- 11. Then coat the celery pieces in the flour.
- 12. Fry the celery pieces in the hot oil until crispy.
- 13. Season the celery pieces with salt and pepper.
- 14. Drizzle the celery pieces with some lemon juice.
- 15. Keep the celery pieces warm in the oven at 70 degrees.
- 16. Peel the garlic and the shallot.
- 17. Dice the garlic and the shallot.
- 18. Mix the paprika powder, the vinegar, the garlic, the shallots, the pepper, the mustard, 4 tablespoons of water and some salt.
- 19. Whisk the oil into the sauce.
- 20. Serve the sauce and the caper berries with the celery slices.
