🍽️ Fried Rice with Sea Bass

Ingredients
- 200 g rice
- 2 spring onions
- 2 garlic cloves
- 2 stalks lemongrass
- 1 chili pepper
- 2 carrots
- 100 g snow peas
- 50 g baby corn
- 100 g bean sprouts
- 50 ml sesame oil
- 50 ml soy sauce
- 4 red sea bass fillets (ready for cooking)
- 2 tbsp sesame seeds
- salt
- pepper from the mill
- 4 tbsp vegetable oil
Instructions
- 1. Cook the rice according to the package instructions.
- 2. Let the rice cool down completely.
- 3. Slice the lemongrass into thin rings.
- 4. Slice the spring onions into thin rings.
- 5. Cut the carrots into long, thin sticks.
- 6. Cut the snow peas into narrow strips.
- 7. Halve the corn cobs.
- 8. Wash the bean sprouts.
- 9. Cut the chili pepper in half lengthwise.
- 10. Remove the seeds from the chili pepper.
- 11. Finely dice the deseeded chili pepper.
- 12. Peel the garlic.
- 13. Finely dice the garlic.
- 14. Dice the chili and garlic together.
- 15. Heat the sesame oil in a wok or a large frying pan on high heat.
- 16. Stir-fry the vegetables (except the bean sprouts) over high heat.
- 17. Deglaze with soy sauce.
- 18. Add the cold rice.
- 19. Fry the rice vigorously.
- 20. Cut the fish into bite-sized pieces.
- 21. Season the fish pieces with salt and pepper.
- 22. Heat vegetable oil in a non-stick frying pan.
- 23. Sear the fish pieces on all sides.
- 24. Sprinkle the finished fish with sesame seeds.
