🍽️ Crispy Rice with Shrimp and Minced Meat

Ingredients
- 200 g Long-grain rice
- Salt
- 2 Eggs (and pepper from the mill)
- 200 g Shrimp (peeled and deveined)
- 3 Shallots
- 2 Garlic cloves
- 4 tbsp Coconut oil
- 0.5 tsp Shrimp paste (Shrimp paste)
- 150 g Minced meat (Beef)
- 3 tbsp Soy sauce
- 1 tsp Sambal oelek
Instructions
- 1. Rinse the rice under running water until the water runs clear.
- 2. Place the rice in a pot with a tight-fitting lid.
- 3. Cover the rice with 375 milliliters of salted water.
- 4. Bring the water to a boil.
- 5. Reduce the heat to the lowest setting.
- 6. Cook the rice with the lid closed for 15 to 20 minutes.
- 7. Remove the pot from the heat when the water is absorbed and the surface looks dry.
- 8. Let the rice steam for another 10 minutes with the lid on.
- 9. Open the lid and let the rice cool down completely.
- 10. Whisk the two eggs in a small bowl.
- 11. Season the egg mixture with a pinch of salt and freshly ground pepper.
- 12. Rinse the shrimp briefly under cold water.
- 13. Pat the shrimp dry with a kitchen towel.
- 14. Cut the shrimp into small pieces.
- 15. Peel the shallots and garlic.
- 16. Chop the shallots and garlic very finely.
- 17. Heat the oil in a hot wok.
- 18. Fry the finely diced shallots and garlic until fragrant.
- 19. Add the shrimp and terasi (fermented fish paste).
- 20. Fry everything while stirring constantly for about 1 minute.
- 21. Add the minced meat to the wok.
- 22. Fry the minced meat until it breaks down into small crumbles.
- 23. Mix in the cooled rice.
- 24. Fry everything together until the rice becomes slightly crispy.
- 25. Pour the whisked eggs over the rice mixture.
- 26. Stir constantly until the eggs set.
- 27. Season the dish to taste with kecap manis (sweet soy sauce).
- 28. Add sambal oelek (chili paste).
- 29. Finally, season with a little salt.
