  1. 1. Clean the radicchio, wash it, and pat it dry. Cut the vegetable lengthwise into quarters or eighths depending on size, but keep the base intact so the leaves stay together.
  2. 2. Peel the garlic and chop it finely. Fry it in a pan with olive oil over low heat, then set it aside. Brush the radicchio with some olive oil and fry it on all sides for about five minutes.
  3. 3. Mix the radicchio with salt, pepper, and the prepared garlic. Drizzle with balsamic vinegar. Serve on plates and sprinkle with grated Pecorino cheese.
