🍽️ Fried Pangasius with Green Asparagus and Sweet Potato Mash

Ingredients
- 4 Pangasius fillets
- 5 tbsp flour
- 1 egg
- 5 tbsp breadcrumbs
- 1 chili pepper (finely chopped)
- vegetable oil (for frying)
- salt
- pepper (from the mill)
- 500 g green asparagus
- 800 g sweet potatoes
- salt
- 200 ml milk
- 25 g butter
- lemon juice
- pepper (from the mill)
Instructions
- 1. Peel the sweet potatoes and cut them into small cubes.
- 2. Place the sweet potato cubes in a pot with salted water.
- 3. Boil the sweet potatoes for about 30 minutes until they are soft.
- 4. Drain the water and let the sweet potatoes drain briefly.
- 5. Add the hot milk and butter to the sweet potatoes.
- 6. Mash the sweet potatoes finely into a creamy mash.
- 7. If necessary, add a little more milk to achieve the desired consistency.
- 8. Season the sweet potato mash with salt, lemon juice, and pepper.
- 9. Thoroughly wash the green asparagus.
- 10. Remove the woody lower ends of the asparagus.
- 11. Blanch the asparagus in plenty of salted water for 8 to 10 minutes (cook briefly in boiling water).
- 12. Let the asparagus drain well.
- 13. Salt and pepper the Pangasius fillets.
- 14. Coat the fillets in flour.
- 15. Dip the fillets into the beaten egg.
- 16. Mix the chopped chili into the breadcrumbs.
- 17. Coat the fillets in the chili breadcrumb mixture.
- 18. Heat 4 to 5 tablespoons of oil in a pan.
- 19. Fry the fillets for about 2 minutes on each side until golden brown.
- 20. Plate the fillets with the sweet potato mash and asparagus.
- 21. Serve the dish hot.
