  1. 1. Peel the sweet potatoes and cut them into small cubes.
  2. 2. Place the sweet potato cubes in a pot with salted water.
  3. 3. Boil the sweet potatoes for about 30 minutes until they are soft.
  4. 4. Drain the water and let the sweet potatoes drain briefly.
  5. 5. Add the hot milk and butter to the sweet potatoes.
  6. 6. Mash the sweet potatoes finely into a creamy mash.
  7. 7. If necessary, add a little more milk to achieve the desired consistency.
  8. 8. Season the sweet potato mash with salt, lemon juice, and pepper.
  9. 9. Thoroughly wash the green asparagus.
  10. 10. Remove the woody lower ends of the asparagus.
  11. 11. Blanch the asparagus in plenty of salted water for 8 to 10 minutes (cook briefly in boiling water).
  12. 12. Let the asparagus drain well.
  13. 13. Salt and pepper the Pangasius fillets.
  14. 14. Coat the fillets in flour.
  15. 15. Dip the fillets into the beaten egg.
  16. 16. Mix the chopped chili into the breadcrumbs.
  17. 17. Coat the fillets in the chili breadcrumb mixture.
  18. 18. Heat 4 to 5 tablespoons of oil in a pan.
  19. 19. Fry the fillets for about 2 minutes on each side until golden brown.
  20. 20. Plate the fillets with the sweet potato mash and asparagus.
  21. 21. Serve the dish hot.
