  1. 1. Rinse the sea bass thoroughly under running water.
  2. 2. Pat the fish completely dry with a kitchen towel.
  3. 3. Season the fish inside and out generously with salt and pepper.
  4. 4. Stuff the fish cavities with the parsley stems.
  5. 5. Heat some oil in a non-stick frying pan.
  6. 6. Place the fish in the hot pan.
  7. 7. Fry the fish slowly on the first side for 6 to 8 minutes until golden brown.
  8. 8. Carefully turn the fish over.
  9. 9. Fry the fish on the second side for another 6 to 8 minutes until golden brown.
  10. 10. Peel the garlic clove and chop it very finely.
  11. 11. Grate the lemon zest (the outer colored skin) from the lemon.
  12. 12. Mix the chopped garlic, chopped parsley, lemon zest, pine nuts, and capers in a bowl.
  13. 13. Add some oil to the herb mixture and stir everything well.
  14. 14. Place the cooked fish onto the serving plates.
  15. 15. Distribute the herb mixture (gremolata) evenly over the fish.
  16. 16. Garnish the dish with lemon wedges and serve immediately.
