  1. 1. Wash the spring onions thoroughly.
  2. 2. Remove the dry ends at the tips.
  3. 3. Slice the onions into thin rings.
  4. 4. Heat some butter in a frying pan.
  5. 5. Place the slices of liver sausage into the hot pan.
  6. 6. Fry the meat on both sides until golden brown.
  7. 7. Temporarily remove the liver sausage from the pan.
  8. 8. Heat one tablespoon of fresh butter in the same pan.
  9. 9. Fry the eggs as sunny-side-up eggs over medium heat.
  10. 10. Place the fried liver sausage onto a plate.
  11. 11. Place the fried eggs directly on top of the meat.
  12. 12. Sprinkle the prepared spring onion rings over the top.
  13. 13. Serve the dish with sweet mustard.
  14. 14. Garnish it additionally with pretzels.
