🥗 Crispy Pan-Fried Salmon on Arugula

Ingredients
- 600 g salmon fillet steaks (4 salmon fillet steaks)
- 200 g arugula
- 4 tbsp parmesan shavings
- olive oil (cold-pressed)
- salt
- pepper (from the mill)
- juice of one lemon
Instructions
- 1. Use a sharp knife to trim off any dark, gray spots from the salmon fillet, as these can taste rancid.
- 2. Heat 4 tablespoons of olive oil in a frying pan.
- 3. Pan-fry the salmon over high heat for about 1 to 2 minutes on each side until crispy.
- 4. Season the fish with salt and pepper after frying.
- 5. Wash the arugula thoroughly and spin it dry.
- 6. Remove the cooked salmon pieces from the pan.
- 7. Place the salmon on pre-warmed plates.
- 8. Drizzle some lemon juice over the fish.
- 9. Place a small mound of arugula on top of the salmon.
- 10. Drizzle 1 tablespoon of olive oil over the salad.
- 11. Sprinkle the dish with Parmesan shavings.
- 12. Serve the salmon immediately while it is still warm.
