  2. 2. Heat 4 tablespoons of olive oil in a frying pan.
  3. 3. Pan-fry the salmon over high heat for about 1 to 2 minutes on each side until crispy.
  4. 4. Season the fish with salt and pepper after frying.
  5. 5. Wash the arugula thoroughly and spin it dry.
  6. 6. Remove the cooked salmon pieces from the pan.
  7. 7. Place the salmon on pre-warmed plates.
  8. 8. Drizzle some lemon juice over the fish.
  9. 9. Place a small mound of arugula on top of the salmon.
  10. 10. Drizzle 1 tablespoon of olive oil over the salad.
  11. 11. Sprinkle the dish with Parmesan shavings.
  12. 12. Serve the salmon immediately while it is still warm.
