  1. 1. Remove any bones from the salmon fillet.
  2. 2. Crush the chili peppers in a mortar.
  3. 3. Mix the crushed chilis with soy sauce, honey, balsamic vinegar, and sesame oil.
  4. 4. Add the marinade to the salmon.
  5. 5. Let the salmon marinate for about 3 hours.
  6. 6. Turn the fish occasionally during the marinating time.
  7. 7. Separate the Pak Choi into individual leaves.
  8. 8. Wash the leaves thoroughly.
  9. 9. Shake the leaves dry.
  10. 10. Chop the leaves if necessary.
  11. 11. Blanch the Pak Choi leaves in boiling salted water for about 5 minutes.
  12. 12. Remove the leaves from the water.
  13. 13. Let the leaves drain.
  14. 14. Season the leaves with salt and lemon juice.
  15. 15. Heat butter in a pan.
  16. 16. Place the salmon fillets skin-side down in the hot butter.
  17. 17. Fry the salmon over low heat for about 6 minutes.
  18. 18. Do not turn the fish while frying.
  19. 19. Remove the salmon from the heat when it is cooked through.
  20. 20. Serve the fried salmon with the Pak Choi.
