🍽️ Crispy Salmon on Creamy Sorrel Sauce

Ingredients
- 4 pieces salmon fillet (approx. 200 g each)
- salt
- 2 tbsp butter
- 0.5 lemon (juice)
- 4 lemon slices
- 1 tbsp butter
- 1 shallot
- 1 tsp flour
- 250 g whipping cream
- 0.5 tsp lemon zest
- salt
- pepper (from the mill)
- nutmeg
- 1 sorrel (handful finely chopped]
Instructions
- 1. Rinse the salmon under cold water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Drizzle the salmon with some lemon juice.
- 4. Season the fish generously with salt and black pepper.
- 5. Peel the shallot and cut it into very small cubes.
- 6. Heat butter in a pot and sweat the shallots until translucent.
- 7. Stir the flour into the butter-shallot mixture.
- 8. Let the mixture cook briefly until light in color.
- 9. Stir in the cream gradually using a whisk.
- 10. Bring the sauce to a boil.
- 11. Simmer the sauce for about 10 minutes over low heat.
- 12. Stir the sauce occasionally while cooking.
- 13. Season the sauce with salt, pepper, nutmeg, and lemon zest.
- 14. Stir the sorrel into the finished sauce.
- 15. Let the sauce simmer with the sorrel for another 2 to 3 minutes.
- 16. Heat butter in a frying pan.
- 17. Fry the salmon in the hot butter for about 3 minutes per side.
- 18. Spread the sorrel sauce onto the plates.
- 19. Place the fried salmon on top of the sauce.
- 20. Cut the lemon slices into quarters.
- 21. Garnish the dish with the lemon quarters.
