  2. 2. Pat the fish dry with a kitchen towel.
  3. 3. Drizzle the fillets with lime juice.
  4. 4. Season the salmon with salt and pepper.
  5. 5. Bring plenty of salted water to a boil.
  6. 6. Cook the ribbon noodles according to package instructions until al dente (firm to the bite).
  7. 7. Whisk the egg yolk with the lime zest and lime juice in a metal bowl.
  8. 8. Place the bowl over a pot of hot, but not boiling, water (bain-marie).
  9. 9. Whisk the egg mixture with a whisk until it is slightly frothy.
  10. 10. Add the butter in small pieces gradually to the egg mixture.
  11. 11. Fold in the butter gently until a creamy sauce forms.
  12. 12. Heat oil in a frying pan.
  13. 13. Fry the salmon fillets for about 3 minutes per side until golden brown.
  14. 14. Rinse the lemon balm under cold water.
  15. 15. Shake the herbs dry.
  16. 16. Pluck the leaves from the stems.
  17. 17. Chop the lemon balm finely.
  18. 18. Season the lime hollandaise with salt, pepper, and sugar.
  19. 19. Stir the chopped lemon balm into the sauce.
  20. 20. Drain the noodles.
  21. 21. Plate the noodles.
  22. 22. Place the pan-fried salmon fillets alongside.
  23. 23. Pour the lime hollandaise over everything.
