🍽️ Pan-fried salmon with ribbon noodles and lime hollandaise

Ingredients
- 8 portions Salmon fillet (a 100 g)
- Juice of 1 Limes
- Salt
- Pepper from the mill
- 3 tbsp Oil
- 400 g Ribbon noodles
- Salt
- 2 Egg yolks
- Zest of 1/2 Limes
- 100 g Butter
- 4 sprigs Lemon balm
- Pepper from the mill
Instructions
- 1. Rinse the salmon fillets under cold water.
- 2. Pat the fish dry with a kitchen towel.
- 3. Drizzle the fillets with lime juice.
- 4. Season the salmon with salt and pepper.
- 5. Bring plenty of salted water to a boil.
- 6. Cook the ribbon noodles according to package instructions until al dente (firm to the bite).
- 7. Whisk the egg yolk with the lime zest and lime juice in a metal bowl.
- 8. Place the bowl over a pot of hot, but not boiling, water (bain-marie).
- 9. Whisk the egg mixture with a whisk until it is slightly frothy.
- 10. Add the butter in small pieces gradually to the egg mixture.
- 11. Fold in the butter gently until a creamy sauce forms.
- 12. Heat oil in a frying pan.
- 13. Fry the salmon fillets for about 3 minutes per side until golden brown.
- 14. Rinse the lemon balm under cold water.
- 15. Shake the herbs dry.
- 16. Pluck the leaves from the stems.
- 17. Chop the lemon balm finely.
- 18. Season the lime hollandaise with salt, pepper, and sugar.
- 19. Stir the chopped lemon balm into the sauce.
- 20. Drain the noodles.
- 21. Plate the noodles.
- 22. Place the pan-fried salmon fillets alongside.
- 23. Pour the lime hollandaise over everything.
