🍽️ Roasted Pumpkin with Cranberries

Ingredients
- 500 g pumpkin flesh
- 1 onion
- 1 Boskop apple
- 250 g cranberries
- 2 sprigs thyme
- 2 tbsp pear syrup
- 80 ml orange juice
- 2 tsp oil
- 50 ml broth
- salt
- pepper (from the mill)
Instructions
- 1. Cut the pumpkin into wedges.
- 2. Peel the onion and the apple.
- 3. Dice the onion and the apple finely.
- 4. Pluck the thyme leaves from the stems.
- 5. Wash the cranberries.
- 6. Mix the cranberries with the apple cubes, thyme leaves, pear syrup, and orange juice.
- 7. Heat 1 teaspoon of oil in a pan.
- 8. Fry the onion cubes in the hot oil.
- 9. Add the cranberry mixture to the onion.
- 10. Simmer the mixture for approx. 3 minutes.
- 11. Season the mixture with salt and pepper.
- 12. Let the cranberry mixture cool down.
- 13. Heat the remaining oil in a pan.
- 14. Fry the pumpkin wedges in the hot oil.
- 15. Deglaze the pumpkin with broth.
- 16. Simmer the pumpkin covered for 10 minutes.
- 17. Taste the pumpkin and adjust seasoning.
- 18. Serve the pumpkin with the cranberry relish.
