🍽️ Pan-fried Cod with Spicy Zucchini Mix

Ingredients
- 2 Zucchini
- Limes
- 1 bunch Parsley
- 2 Chili peppers
- 5 tbsp Olive oil
- 3 tbsp Balsamic vinegar
- Salt
- Pepper (from the mill)
- 2 pieces Cod fillet (each 200-250 g)
Instructions
- 1. Squeeze half of the lime juice over the cod fillets.
- 2. Season the fish generously with salt and pepper.
- 3. Wash the zucchini thoroughly.
- 4. Remove the tough ends of the zucchini.
- 5. Cut the zucchini into very small cubes.
- 6. Wash the parsley.
- 7. Shake the parsley dry.
- 8. Finely chop the parsley leaves.
- 9. Wash the chili peppers.
- 10. Remove the tough stems of the chili peppers.
- 11. Cut the chili peppers in half lengthwise.
- 12. Remove the inside of the chili peppers, including all white membranes and seeds.
- 13. Cut the deseeded chili peppers into thin strips.
- 14. Heat three tablespoons of oil in a frying pan.
- 15. Add the diced zucchini to the hot pan.
- 16. Add the chili strips to the pan.
- 17. Sauté the vegetables for two to three minutes.
- 18. Add the chopped parsley to the vegetables.
- 19. Add the remaining lime juice.
- 20. Cook the vegetables for another two minutes.
- 21. Season the zucchini mixture with salt and pepper.
- 22. Heat the remaining oil in a clean frying pan.
- 23. Place the cod fillets in the hot pan.
- 24. Fry the fillets on the first side for about three minutes.
- 25. Turn the fillets and fry them on the other side for another three minutes.
- 26. Deglaze the pan with balsamic vinegar.
- 27. Serve the fish on plates.
- 28. Add the spicy zucchini mixture as a side dish.
