🥗 Crispy Fried Herring with Mashed Potatoes and Salad

Ingredients
- 600 g Herring fillet
- 4 tbsp Flour
- 4 Sage leaves
- Olive oil (extra virgin)
- Apple cider vinegar
- butter
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 1 kg Potatoes (waxy)
- 150 ml Milk
- 2 Bell peppers (red)
- 2 tbsp Capers
- 100 g black olives
- 1 bunch Arugula
- 1 red onion
Instructions
- 1. Wash the potatoes and place them in a pot with plenty of water.
- 2. Cook the potatoes over medium heat for 20 to 30 minutes until they are soft.
- 3. Peel the cooked potatoes and press them through a potato ricer.
- 4. Stir in 1 tablespoon of butter and the milk into the potatoes.
- 5. Season the mash with salt, pepper, and nutmeg to taste.
- 6. Rinse the herring fillets under cold, running water.
- 7. Gently pat the fillets dry with kitchen paper.
- 8. Salt and pepper the fillets on both sides.
- 9. Coat the fillets in flour until they are completely covered.
- 10. Shake off any excess flour from the fillets.
- 11. Wash the bell peppers and cut them in half lengthwise.
- 12. Remove the seeds and cut the flesh into rough pieces.
- 13. Heat 1 tablespoon of oil in a pan over medium heat.
- 14. Sauté the pepper pieces for 3 to 4 minutes while stirring.
- 15. Remove the peppers from the pan and let them cool down.
- 16. Peel the onion and chop it finely.
- 17. Rinse the capers under running water.
- 18. Wash the arugula and spin it dry.
- 19. Cut the arugula into bite-sized pieces.
- 20. Place the arugula, cooled peppers, onion, capers, and olives into a bowl.
- 21. Mix 3 tablespoons of oil and 2 tablespoons of apple cider vinegar.
- 22. Season the dressing with salt and pepper.
- 23. Pour the dressing over the salad and mix everything well.
- 24. Heat 3 tablespoons of oil and 1 tablespoon of butter in a large pan.
- 25. Place the herring fillets and the sage leaves into the hot pan.
- 26. Fry the fillets over medium heat until golden brown on both sides.
- 27. Place the mashed potatoes and the salad on the plates.
- 28. Place the fried herring fillets on top of the food.
- 29. Garnish the dishes with the fried sage leaves.
- 30. Serve the dish immediately while warm.
