  1. 1. Thoroughly wash the green asparagus under running water.
  2. 2. Use a vegetable peeler to peel the bottom third of the stalks.
  3. 3. Remove the woody ends generously.
  4. 4. Cut off the tender asparagus tips and set them aside.
  5. 5. Cut the remaining asparagus stalks very diagonally into pieces about 5 centimeters long.
  6. 6. Heat rapeseed oil in a large non-stick pan.
  7. 7. Fry the asparagus pieces over medium heat.
  8. 8. Stir them occasionally.
  9. 9. Fry them for 8 to 10 minutes until they are tender-crisp.
  10. 10. Turn down the heat.
  11. 11. Carefully pour off the frying oil from the pan.
  12. 12. Add walnut oil to the fried green asparagus.
  13. 13. Lightly salt the asparagus pieces.
  14. 14. Stir everything well once more.
  15. 15. Arrange the asparagus on a plate with the ham.
  16. 16. Freshly grind pepper over the fried green asparagus.
  17. 17. Serve the dish immediately.
