🍽️ Pan-fried green asparagus

Ingredients
- 1 kg green asparagus
- 3 tbsp rapeseed oil
- 2 tbsp walnut oil
- salt
- 100 g Bresaola
- black pepper (from the mill)
Instructions
- 1. Thoroughly wash the green asparagus under running water.
- 2. Use a vegetable peeler to peel the bottom third of the stalks.
- 3. Remove the woody ends generously.
- 4. Cut off the tender asparagus tips and set them aside.
- 5. Cut the remaining asparagus stalks very diagonally into pieces about 5 centimeters long.
- 6. Heat rapeseed oil in a large non-stick pan.
- 7. Fry the asparagus pieces over medium heat.
- 8. Stir them occasionally.
- 9. Fry them for 8 to 10 minutes until they are tender-crisp.
- 10. Turn down the heat.
- 11. Carefully pour off the frying oil from the pan.
- 12. Add walnut oil to the fried green asparagus.
- 13. Lightly salt the asparagus pieces.
- 14. Stir everything well once more.
- 15. Arrange the asparagus on a plate with the ham.
- 16. Freshly grind pepper over the fried green asparagus.
- 17. Serve the dish immediately.
