🍽️ Pan-fried Cod on Onions

Ingredients
- 1 kg red onions
- 2 tbsp clarified butter
- 250 ml dry white wine
- salt
- pepper (from the mill)
- 2 tbsp chive rings
- 650 g cod fillet (or cod)
- 2 tbsp flour
- lemons (juice)
- 1 tbsp butter
Instructions
- 1. Peel the onions.
- 2. Cut the onions lengthwise into wedges.
- 3. Heat ghee in a pan.
- 4. Sauté the onions briefly while stirring.
- 5. Add the wine to the onions.
- 6. Season the mixture with salt and pepper.
- 7. Cover the pan.
- 8. Let the onions cook covered over low heat for about 20 minutes.
- 9. Finally, adjust the seasoning of the onions to taste.
- 10. Cut the fish fillet into 4 portions.
- 11. Remove any remaining bones from the fish if necessary.
- 12. Season the fish pieces with salt and pepper.
- 13. Drizzle the fish pieces with lemon juice.
- 14. Coat the fish pieces in flour just before frying.
- 15. Heat butter in a non-stick pan.
- 16. Pan-fry the fish pieces in the hot butter over medium heat until golden brown.
- 17. Fry the fish on both sides.
- 18. Divide the onion mixture among plates.
- 19. Place the fried fish fillets on top of the vegetables.
- 20. Sprinkle the dish with chives.
