🍽️ Pan-fried Cod on Vegetables

Ingredients
- 8 Tomaten
- 4 kleine Zucchini
- 4 Knoblauchzehen
- 1 getrocknete Chilischote
- 2 tbsp chopped Parsley
- Salt
- Pfeffer (aus der Mühle)
- Olive oil
- 4 Kabeljaufilets (frisch oder TK)
- 200 g Mehl
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Halve the tomatoes and remove the core.
- 3. Cut the tomatoes into bite-sized pieces.
- 4. Wash the zucchini.
- 5. Cut the zucchini into small cubes.
- 6. Peel the garlic.
- 7. Halve the garlic cloves.
- 8. Add 1/2 liter of water, the tomatoes, garlic, zucchini, chili, and parsley to a pot.
- 9. Bring the mixture to a boil.
- 10. Season the vegetables with salt.
- 11. Let the vegetables cook gently for 4 to 5 minutes.
- 12. Remove the pot from the heat.
- 13. Stir 2 tablespoons of cold olive oil into the vegetables.
- 14. Season the cod fillets with salt.
- 15. Pepper the cod fillets.
- 16. Coat the fillets in flour until lightly covered.
- 17. Heat 3 tablespoons of oil in a frying pan.
- 18. Fry the fillets in the pan until golden brown on both sides.
- 19. Place a cod fillet on a portion of the zucchini-tomato vegetables on a plate.
- 20. Serve the dish hot.
