  1. 1. Preheat the oven to 200 degrees Celsius (180 degrees Celsius for fan-assisted or gas mark 3).
  2. 2. Brush a baking tray with about two teaspoons of olive oil.
  3. 3. Wash the cauliflower and remove the tough core end.
  4. 4. Cut the cauliflower into six to eight thick slices, each about 1.5 to 2 centimeters thick.
  5. 5. Place the slices on the prepared baking tray.
  6. 6. Brush the remaining oil over the cauliflower slices.
  7. 7. Drizzle a few drops of lemon juice over the cauliflower.
  8. 8. Season everything with salt, pepper, and curry powder.
  9. 9. Bake the cauliflower in the preheated oven for about 25 minutes.
  10. 10. Remove the cauliflower from the oven when the edges are lightly browned.
  11. 11. Wash the fresh basil and shake it dry.
  12. 12. Finely chop two stems of the basil.
  13. 13. Stir the coconut milk in a bowl until smooth.
  14. 14. Mix the cream cheese smoothly with the coconut milk.
  15. 15. Season the sauce with a little lemon juice, salt, and pepper.
  16. 16. Stir the finely chopped basil into the sauce.
  17. 17. Taste the sauce one last time and adjust seasoning if needed.
  18. 18. Clean the red cabbage and wash it.
  19. 19. Shred the red cabbage into thin strips.
  20. 20. Pluck the leaves from the remaining fresh basil.
  21. 21. Wash the apple and dry it.
  22. 22. Slice the apple thinly across the grain.
  23. 23. Drizzle the apple slices with the remaining lemon juice.
  24. 24. Distribute the red cabbage strips and apple slices on the baking tray next to the cauliflower.
  25. 25. Drizzle everything with the coconut basil sauce.
  26. 26. Sprinkle a little pepper over it.
  27. 27. Garnish the dish with the basil leaves.
  28. 28. Serve the dish immediately.
