🍽️ Roasted Cauliflower with Apple and Creamy Coconut Basil Sauce

Ingredients
- 1.5 tbsp olive oil
- 1 cauliflower
- 3 tbsp lemon juice
- salt
- pepper
- curry powder
- 4 sprigs basil
- 100 ml coconut milk
- 150 g cream cheese (30% fat in dry matter)
- 150 g red cabbage
- 1 apple (yellow or green)
Instructions
- 1. Preheat the oven to 200 degrees Celsius (180 degrees Celsius for fan-assisted or gas mark 3).
- 2. Brush a baking tray with about two teaspoons of olive oil.
- 3. Wash the cauliflower and remove the tough core end.
- 4. Cut the cauliflower into six to eight thick slices, each about 1.5 to 2 centimeters thick.
- 5. Place the slices on the prepared baking tray.
- 6. Brush the remaining oil over the cauliflower slices.
- 7. Drizzle a few drops of lemon juice over the cauliflower.
- 8. Season everything with salt, pepper, and curry powder.
- 9. Bake the cauliflower in the preheated oven for about 25 minutes.
- 10. Remove the cauliflower from the oven when the edges are lightly browned.
- 11. Wash the fresh basil and shake it dry.
- 12. Finely chop two stems of the basil.
- 13. Stir the coconut milk in a bowl until smooth.
- 14. Mix the cream cheese smoothly with the coconut milk.
- 15. Season the sauce with a little lemon juice, salt, and pepper.
- 16. Stir the finely chopped basil into the sauce.
- 17. Taste the sauce one last time and adjust seasoning if needed.
- 18. Clean the red cabbage and wash it.
- 19. Shred the red cabbage into thin strips.
- 20. Pluck the leaves from the remaining fresh basil.
- 21. Wash the apple and dry it.
- 22. Slice the apple thinly across the grain.
- 23. Drizzle the apple slices with the remaining lemon juice.
- 24. Distribute the red cabbage strips and apple slices on the baking tray next to the cauliflower.
- 25. Drizzle everything with the coconut basil sauce.
- 26. Sprinkle a little pepper over it.
- 27. Garnish the dish with the basil leaves.
- 28. Serve the dish immediately.
