  1. 1. Stir the quark until creamy.
  2. 2. Season the quark with salt and pepper.
  3. 3. Clean the spring onions and wash them.
  4. 4. Finely chop the spring onions.
  5. 5. Set aside the herbs for later.
  6. 6. Stir the spring onions and herbs into the quark.
  7. 7. Wash the zucchini.
  8. 8. Remove the tough ends of the zucchini.
  9. 9. Cut the zucchini lengthwise into quarters or eighths.
  10. 10. Cut the zucchini pieces into approx. 4 cm long pieces.
  11. 11. Heat 1 tbsp of oil in a pan.
  12. 12. Roast the pumpkin seeds until golden brown in the oil.
  13. 13. Pour the roasted pumpkin seeds onto a plate.
  14. 14. Heat the remaining oil in the same pan.
  15. 15. Fry the zucchini for 2-3 minutes.
  16. 16. Season the zucchini with salt and pepper.
  17. 17. Add the roasted pumpkin seeds to the zucchini.
  18. 18. Plate the zucchini with the pumpkin seeds.
  19. 19. Serve the zucchini together with the herb quark.
