🍽️ Fried Zucchini with Herb Quark

Ingredients
- 500 g quark (20% fat)
- salt
- pepper from the mill
- 1 bunch spring onions
- 4 tbsp mixed, chopped fresh herbs (e.g. parsley, dill, chervil, basil)
- 750 g zucchini
- 4 tbsp oil
- 2 tbsp pumpkin seeds
- salt
- pepper from the mill
Instructions
- 1. Stir the quark until creamy.
- 2. Season the quark with salt and pepper.
- 3. Clean the spring onions and wash them.
- 4. Finely chop the spring onions.
- 5. Set aside the herbs for later.
- 6. Stir the spring onions and herbs into the quark.
- 7. Wash the zucchini.
- 8. Remove the tough ends of the zucchini.
- 9. Cut the zucchini lengthwise into quarters or eighths.
- 10. Cut the zucchini pieces into approx. 4 cm long pieces.
- 11. Heat 1 tbsp of oil in a pan.
- 12. Roast the pumpkin seeds until golden brown in the oil.
- 13. Pour the roasted pumpkin seeds onto a plate.
- 14. Heat the remaining oil in the same pan.
- 15. Fry the zucchini for 2-3 minutes.
- 16. Season the zucchini with salt and pepper.
- 17. Add the roasted pumpkin seeds to the zucchini.
- 18. Plate the zucchini with the pumpkin seeds.
- 19. Serve the zucchini together with the herb quark.
