🍽️ Crispy Pan-Fried Zander Fillets with Creamy Horseradish Sauce

Ingredients
- 2 small shallots
- 20 g butter
- 100 ml white wine (or vegetable broth)
- 100 ml fish stock
- 100 ml soy cream
- 20 g fresh horseradish (1 piece)
- 0.5 lemon
- salt
- white pepper
- 320 g zander fillet (2 zander fillets; with skin, scaled)
- 1 tbsp whole wheat flour
- 1 tbsp olive oil
Instructions
- 1. Peel the shallots and cut them into very small cubes.
- 2. Heat the butter in a pot.
- 3. Add the shallots to the hot butter.
- 4. Sauté the shallots over medium heat for 2 to 3 minutes until they are translucent.
- 5. Pour in the white wine or vegetable broth.
- 6. Let the liquid reduce until almost completely evaporated.
- 7. Pour the fish stock into the pot.
- 8. Let the mixture reduce again until it has about half its previous volume.
- 9. Add the soy cream.
- 10. Continue to reduce the sauce until it becomes creamy.
- 11. Peel the horseradish.
- 12. Grate the horseradish finely.
- 13. Squeeze the lemon to extract the juice.
- 14. Bring the sauce back to a boil.
- 15. Remove the pot from the heat.
- 16. Stir the grated horseradish into the sauce.
- 17. Season the sauce with salt and pepper.
- 18. Add the lemon juice.
- 19. Keep the sauce warm.
- 20. Rinse the zander fillets under running water.
- 21. Pat the fillets dry with a kitchen towel.
- 22. Score the fish skin lightly several times with a very sharp knife.
- 23. Salt the zander fillets.
- 24. Pepper the zander fillets.
- 25. Coat the fillets in flour so they are completely covered.
- 26. Shake off the excess flour lightly.
- 27. Heat the olive oil in a pan until very hot.
- 28. Place the zander fillets in the pan with the skin side down.
- 29. Fry the fillets over medium heat for 7 to 8 minutes until the skin is very crispy.
- 30. Turn the zander fillets over.
- 31. Fry the flesh side for 1 to 2 minutes.
- 32. Place the cooked zander fillets on plates.
- 33. Pour the warm sauce over the fillets.
- 34. Serve the dish immediately.
