  1. 1. Peel the shallots and cut them into very small cubes.
  2. 2. Heat the butter in a pot.
  3. 3. Add the shallots to the hot butter.
  4. 4. Sauté the shallots over medium heat for 2 to 3 minutes until they are translucent.
  5. 5. Pour in the white wine or vegetable broth.
  6. 6. Let the liquid reduce until almost completely evaporated.
  7. 7. Pour the fish stock into the pot.
  8. 8. Let the mixture reduce again until it has about half its previous volume.
  9. 9. Add the soy cream.
  10. 10. Continue to reduce the sauce until it becomes creamy.
  11. 11. Peel the horseradish.
  12. 12. Grate the horseradish finely.
  13. 13. Squeeze the lemon to extract the juice.
  14. 14. Bring the sauce back to a boil.
  15. 15. Remove the pot from the heat.
  16. 16. Stir the grated horseradish into the sauce.
  17. 17. Season the sauce with salt and pepper.
  18. 18. Add the lemon juice.
  19. 19. Keep the sauce warm.
  20. 20. Rinse the zander fillets under running water.
  21. 21. Pat the fillets dry with a kitchen towel.
  22. 22. Score the fish skin lightly several times with a very sharp knife.
  23. 23. Salt the zander fillets.
  24. 24. Pepper the zander fillets.
  25. 25. Coat the fillets in flour so they are completely covered.
  26. 26. Shake off the excess flour lightly.
  27. 27. Heat the olive oil in a pan until very hot.
  28. 28. Place the zander fillets in the pan with the skin side down.
  29. 29. Fry the fillets over medium heat for 7 to 8 minutes until the skin is very crispy.
  30. 30. Turn the zander fillets over.
  31. 31. Fry the flesh side for 1 to 2 minutes.
  32. 32. Place the cooked zander fillets on plates.
  33. 33. Pour the warm sauce over the fillets.
  34. 34. Serve the dish immediately.
