🍽️ Crispy Squid with Fennel-Lemon Marinade

Ingredients
- 1 kg small squid
- 2 garlic cloves
- 1 red chili pepper
- 1 organic lemon
- 1 tsp fennel seeds
- 1 tsp peppercorns
- 4 tbsp olive oil
- salt
Instructions
- 1. Rinse the squid thoroughly and pat them completely dry with a kitchen towel.
- 2. Place the dry squid into a shallow dish.
- 3. Peel the garlic cloves and chop them very finely.
- 4. Cut the chili pepper in half lengthwise.
- 5. Remove the seeds from the chili pepper.
- 6. Rinse the deseeded chili pepper and chop it finely.
- 7. Rinse the lemon under hot water and pat it dry.
- 8. Finely grate the outer skin of the lemon (the zest).
- 9. Squeeze the juice out of the lemon.
- 10. Crush the fennel seeds and peppercorns in a mortar until they form a coarse powder.
- 11. Mix the ground spice with 4 tablespoons of oil, the lemon zest, the lemon juice, the chopped chili, and the chopped garlic.
- 12. Pour the marinade over the squid.
- 13. Mix everything well so that the squid are completely covered with the marinade.
- 14. Cover the dish.
- 15. Let the squid marinate in the refrigerator for about 2 hours.
- 16. Take the squid out of the marinade.
- 17. Heat the remaining oil in a frying pan.
- 18. Add the squid to the hot pan.
- 19. Squeeze half of the lemon over the squid.
- 20. Fry the squid over medium heat for 5 to 6 minutes.
- 21. Season the finished squid with salt at the end.
- 22. Serve the squid immediately.
