  1. 1. Rinse the squid thoroughly and pat them completely dry with a kitchen towel.
  2. 2. Place the dry squid into a shallow dish.
  3. 3. Peel the garlic cloves and chop them very finely.
  4. 4. Cut the chili pepper in half lengthwise.
  5. 5. Remove the seeds from the chili pepper.
  6. 6. Rinse the deseeded chili pepper and chop it finely.
  7. 7. Rinse the lemon under hot water and pat it dry.
  8. 8. Finely grate the outer skin of the lemon (the zest).
  9. 9. Squeeze the juice out of the lemon.
  10. 10. Crush the fennel seeds and peppercorns in a mortar until they form a coarse powder.
  11. 11. Mix the ground spice with 4 tablespoons of oil, the lemon zest, the lemon juice, the chopped chili, and the chopped garlic.
  12. 12. Pour the marinade over the squid.
  13. 13. Mix everything well so that the squid are completely covered with the marinade.
  14. 14. Cover the dish.
  15. 15. Let the squid marinate in the refrigerator for about 2 hours.
  16. 16. Take the squid out of the marinade.
  17. 17. Heat the remaining oil in a frying pan.
  18. 18. Add the squid to the hot pan.
  19. 19. Squeeze half of the lemon over the squid.
  20. 20. Fry the squid over medium heat for 5 to 6 minutes.
  21. 21. Season the finished squid with salt at the end.
  22. 22. Serve the squid immediately.
