🍽️ Crispy Bacon Potatoes with Egg

Ingredients
- 4 eggs
- 1 bunch chives
- 1 kg firm-cooking, small potatoes
- 1 onion
- 3 tbsp ghee
- 50 g smoked bacon (diced)
- salt (pepper)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the unpeeled potatoes in salted water for 20 minutes until tender.
- 3. Let the potatoes cool down the next day.
- 4. Peel the cooled potatoes.
- 5. Cut the potatoes into wedges.
- 6. Peel the onion.
- 7. Dice the onion finely.
- 8. Heat ghee in a heavy pan.
- 9. Add the potato wedges to the hot pan.
- 10. Fry the potatoes slowly.
- 11. Turn the potatoes only occasionally.
- 12. Add the bacon and onions at the end.
- 13. Continue frying everything together.
- 14. Season with salt and pepper.
- 15. Crack the eggs.
- 16. Stir the eggs into the potatoes.
- 17. Cook the eggs briefly until set.
- 18. Sprinkle the dish with chives.
- 19. Taste and adjust seasoning with salt and pepper again.
- 20. Serve the fried potatoes with a fresh green salad.
