Ingredients
- 800 g potatoes
- 2 eggs
- 150 g flour
- 80 g ghee
- salt
- pepper
- nutmeg (freshly grated)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot with salted water.
- 3. Boil the potatoes for about 30 minutes until they are tender.
- 4. Peel the potatoes while they are still hot.
- 5. Press the potato flesh through a potato ricer.
- 6. Let the potato mixture cool down slightly to allow steam to escape.
- 7. Add the eggs and flour to the potato mixture.
- 8. Knead everything into a smooth dough.
- 9. Season the dough with nutmeg, salt, and pepper.
- 10. Flour your hands.
- 11. Form finger-thick rolls from the dough.
- 12. Make the rolls about as long as a thumb.
- 13. Point the ends of the rolls.
- 14. Fill a pot with salted water and bring it to a gentle simmer.
- 15. Place the shaped dumplings into the water.
- 16. Let the dumplings sit over low heat for about 2 minutes.
- 17. Remove the dumplings from the water.
- 18. Dip the dumplings briefly into cold water.
- 19. Let the dumplings drain well on a sieve.
- 20. Heat clarified butter in a pan.
- 21. Fry the dumplings in batches until golden brown.
