  1. 1. Squeeze one lime to extract the juice.
  2. 2. Cut the second lime into wedges.
  3. 3. Wash the coriander thoroughly.
  4. 4. Shake the coriander dry.
  5. 5. Rinse the sardines under running water.
  6. 6. Pat the fish dry inside and out with kitchen paper.
  7. 7. Drizzle the dry fish with the lime juice.
  8. 8. Mix the flour with the cumin in a bowl.
  9. 9. Spread the flour mixture onto a shallow plate.
  10. 10. Whisk the egg with a little salt and pepper on a separate plate.
  11. 11. Coat the fish in the flour mixture first.
  12. 12. Shake off the excess flour from the fish.
  13. 13. Then dip the floured fish into the egg mixture.
  14. 14. Heat the oil in a large pan.
  15. 15. Fry the sardines on both sides until golden brown.
  16. 16. Place the cooked fish on kitchen paper.
  17. 17. Let the excess fat drain from the fish.
  18. 18. Arrange the fried sardines on a plate.
  19. 19. Serve the fish with the lime wedges and coriander.
