🍽️ Crispy Sardines with Lime

Ingredients
- 2 limes
- 1 handful cilantro leaves
- 12 sardines (ready for cooking)
- 80 g corn flour
- 1 pinch ground cumin
- 1 egg
- salt
- pepper (freshly ground)
- 3 tbsp vegetable oil (for frying)
Instructions
- 1. Squeeze one lime to extract the juice.
- 2. Cut the second lime into wedges.
- 3. Wash the coriander thoroughly.
- 4. Shake the coriander dry.
- 5. Rinse the sardines under running water.
- 6. Pat the fish dry inside and out with kitchen paper.
- 7. Drizzle the dry fish with the lime juice.
- 8. Mix the flour with the cumin in a bowl.
- 9. Spread the flour mixture onto a shallow plate.
- 10. Whisk the egg with a little salt and pepper on a separate plate.
- 11. Coat the fish in the flour mixture first.
- 12. Shake off the excess flour from the fish.
- 13. Then dip the floured fish into the egg mixture.
- 14. Heat the oil in a large pan.
- 15. Fry the sardines on both sides until golden brown.
- 16. Place the cooked fish on kitchen paper.
- 17. Let the excess fat drain from the fish.
- 18. Arrange the fried sardines on a plate.
- 19. Serve the fish with the lime wedges and coriander.
