  1. 1. Rinse the meat under cold water and pat it dry with a kitchen towel.
  2. 2. Cut the meat into thin strips.
  3. 3. Peel the ginger and the shallot.
  4. 4. Dice the ginger and the shallot very finely.
  5. 5. Mix the finely diced ingredients with four tablespoons of soy sauce.
  6. 6. Pour the marinade over the meat strips.
  7. 7. Let the meat marinate for 15 minutes.
  8. 8. Cook the Mie noodles according to the instructions on the package.
  9. 9. Peel the carrots and wash them.
  10. 10. Cut the carrots into small batons.
  11. 11. Clean the leek and cut off the ends.
  12. 12. Wash the leek and cut it into pieces.
  13. 13. Heat oil in a frying pan or wok.
  14. 14. Fry the marinated meat in the hot oil for 4 minutes.
  15. 15. Remove the meat from the pan and set it aside.
  16. 16. Fry the carrots and leek in the remaining fat.
  17. 17. Pour the broth into the pan.
  18. 18. Season with salt and pepper.
  19. 19. Stir the remaining soy sauce into the vegetable broth.
