🍝 Chicken Mie Noodles with Broccoli and Orange Zest

Ingredients
- 250 g broccoli florets
- salt
- 1 red chili pepper
- 150 g red cabbage
- 2 spring onions
- 400 g chicken breast fillet (kitchen-ready, skinless)
- 500 g spaghetti
- 1 untreated orange
- 2 tbsp olive oil
- 1 tsp mustard seeds
- 100 ml poultry broth
- 2 tbsp coarsely chopped peanuts (unsalted)
Instructions
- 1. Wash the broccoli thoroughly.
- 2. Bring water to a boil and add some salt.
- 3. Cook the broccoli in this boiling salted water for 3 to 4 minutes.
- 4. Drain the broccoli.
- 5. Rinse the broccoli immediately with cold water to stop the cooking process.
- 6. Let the broccoli drain well.
- 7. Wash the chili pepper.
- 8. Slice the chili pepper into rings.
- 9. Remove the tough cores from the red cabbage.
- 10. Cut the red cabbage into very fine strips.
- 11. Wash the spring onions.
- 12. Remove the dry ends of the spring onions.
- 13. Slice the spring onions into strips.
- 14. Wash the meat.
- 15. Pat the meat dry with a kitchen towel.
- 16. Slice the meat into strips.
- 17. Bring water to a boil and add some salt.
- 18. Cook the mie noodles in this boiling salted water until they are al dente (firm to the bite).
- 19. Rinse the orange under hot water.
- 20. Finely grate the peel of the orange.
- 21. Squeeze the juice from the orange.
- 22. Heat oil in a large pan.
- 23. Fry the meat strips in the hot pan until they are browned.
- 24. Add the prepared vegetables to the pan.
- 25. Add the chili rings to the pan.
- 26. Add the onion strips to the pan.
- 27. Add the orange zest to the pan.
- 28. Add the mustard seeds to the pan.
- 29. Fry everything together briefly.
- 30. Deglaze the pan with the orange juice.
- 31. Pour the broth into the pan.
- 32. Let the mixture simmer on medium heat for 5 to 10 minutes.
- 33. Season the sauce with salt and pepper.
- 34. Drain the cooked noodles.
- 35. Add the noodles to the chicken and vegetable mixture in the pan.
- 36. Fold the nuts into the noodle mixture.
- 37. Toss the pan briefly to combine everything.
- 38. Preheat the serving bowls.
- 39. Fill the noodles into the preheated bowls.
- 40. Serve the dish immediately.
