🍽️ Crispy Lamb Leg with Fresh Mint Sauce

Ingredients
- 2 tbsp oil
- 1 tbsp mustard (medium hot)
- salt
- pepper
- 1 lamb leg (2 kg)
- 2 garlic cloves
- 2 sprigs rosemary
- 6 stems mint
- 100 ml white wine vinegar
- 2 tbsp sugar
Instructions
- 1. Preheat the oven to 200 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Whisk the oil and mustard together in a small bowl.
- 3. Brush the lamb leg all over with 1 to 2 tablespoons of the oil-mustard mixture.
- 4. Season the meat with salt and pepper.
- 5. Place the lamb leg into a roasting pan.
- 6. Place the roasting pan on the second rack from the bottom in the hot oven.
- 7. Roast the lamb leg for 1 hour.
- 8. Peel the garlic cloves while the meat is roasting.
- 9. Cut the garlic cloves into long, thin slivers.
- 10. Wash the rosemary sprigs and shake them dry.
- 11. Chop the rosemary sprigs into small pieces.
- 12. Reduce the oven temperature to 160 degrees Celsius top and bottom heat.
- 13. Brush the lamb leg with the remaining oil-mustard mixture.
- 14. Insert the garlic slivers slightly into the meat.
- 15. Rinse the mint and shake it dry.
- 16. Set aside 2 mint tips for decoration.
- 17. Finely chop the remaining mint leaves.
- 18. Pour 100 milliliters of boiling water over the chopped mint.
- 19. Let the mint steep for 2 to 3 minutes.
- 20. Stir the white wine vinegar and sugar into the mint liquid.
- 21. Season the sauce to taste with a little salt.
- 22. Serve the lamb leg with the mint sauce.
- 23. Garnish the dish with green beans and baked potatoes if desired.
