🍽️ Crispy Salmon with Fruity Spicy Orange-Wasabi Sauce

Ingredients
- 1 bunch thin spring onions
- 2 garlic cloves
- 2 tbsp finely chopped cilantro
- 700 g salmon fillet (skinless)
- 3 tbsp oil
- salt
- pepper from the mill
- 4 tbsp sour cream
- 6 tbsp orange juice
- 2 tbsp lime juice
- 1 tsp wasabi
- lime and orange wedges
- cilantro leaves
Instructions
- 1. Wash the spring onions thoroughly.
- 2. Remove the tough ends and slice the onions into thin rings.
- 3. Peel the garlic clove.
- 4. Mince the garlic very finely.
- 5. Cut the salmon fillet into eight equal strips.
- 6. Heat the oil in a large pan over medium heat.
- 7. Fry the salmon strips on all sides for about four minutes until golden brown.
- 8. Season the fish with salt and pepper.
- 9. Stir the crème fraîche until smooth.
- 10. Mix the crème fraîche with one tablespoon of orange juice.
- 11. Season the crème fraîche with salt and pepper to taste.
- 12. Add the chopped garlic and spring onions to the pan with the fish.
- 13. Sauté the vegetables for about one minute.
- 14. Pour in the lime juice and the remaining orange juice.
- 15. Add half a cup of water.
- 16. Bring the sauce to a boil.
- 17. Dissolve the wasabi powder in the sauce while stirring continuously.
- 18. Add the fresh coriander.
- 19. Season the sauce again with salt and pepper to taste.
- 20. Place the salmon on plates.
- 21. Pour the hot sauce over the fish.
- 22. Garnish the plate with wedges of lime and orange.
- 23. Place a dollop of the prepared crème fraîche on the plate.
- 24. Sprinkle the dish with fresh coriander.
- 25. Serve the meal immediately.
