🍽️ Crispy Herb Potatoes

Ingredients
- 800 g small, waxy potatoes
- Salt
- 30 g ghee
- 3 tbsp mixed, roughly chopped herbs (e.g. parsley, basil, oregano, chives)
- Pepper (from the mill)
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Bring a pot of water and salt to a boil.
- 3. Add the potatoes to the boiling water.
- 4. Cook the potatoes for about 20 minutes until tender.
- 5. Drain the water and let the potatoes steam dry for a moment.
- 6. Heat ghee (clarified butter) in a large frying pan.
- 7. Fry the potatoes in the pan until golden brown.
- 8. Add the fresh herbs to the potatoes.
- 9. Toss the pan to distribute the herbs evenly.
- 10. Season the potatoes with salt and pepper to taste.
- 11. Serve the finished potatoes on a large platter.
