🍽️ Grilled Cod and Vegetable Skewers

Ingredients
- 600 g cod fillet
- 2 garlic cloves
- 3 tbsp lemon juice
- 5 tbsp olive oil
- 2 small zucchini
- 1 yellow bell pepper
- 2 red onions
- salt
- pepper (from the mill)
- 300 g yogurt
- 1 tbsp lemon juice
- 2 tbsp whipping cream
- 2 tbsp chopped mixed herbs
Instructions
- 1. Rinse the cod under running water.
- 2. Pat the fish dry with a kitchen towel.
- 3. Cut the cod into bite-sized cubes.
- 4. Peel the garlic.
- 5. Press the garlic through a garlic press.
- 6. Mix the garlic with the lemon juice and 3 tablespoons of oil.
- 7. Toss the fish cubes in the marinade until fully coated.
- 8. Let the fish marinate for approx. 20 minutes.
- 9. Wash the zucchini.
- 10. Trim the ends of the zucchini.
- 11. Slice the zucchini into finger-thick rounds.
- 12. Core the bell pepper.
- 13. Wash the bell pepper.
- 14. Remove all white inner membranes from the bell pepper.
- 15. Cut the bell pepper into large cubes.
- 16. Peel the onions.
- 17. Cut the onions lengthwise into wedges.
- 18. Thread the fish and vegetables alternately onto 8 skewers.
- 19. Season the skewers with salt and pepper.
- 20. Heat the remaining oil in a frying pan.
- 21. Fry the skewers on all sides for 5 to 7 minutes.
- 22. Cut the chives into small rings.
- 23. Mix the chives with yogurt, cream, and lemon juice.
- 24. Season the sauce with salt and pepper to taste.
- 25. Serve the skewers with white bread.
